Ingredients
- 14 oz Brussels sprouts
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon breadcrumbs
- 3 tablespoons extra virgin olive oil
- salt
- pepper

Preparation of Brussels Sprout Fritters
Clean the Brussels sprouts by removing the outer leaves and cutting off the tougher part at the base
Blanch the Brussels sprouts for 10 minutes in salted water. Drain and place them on a towel to dry, removing excess liquid, and let them cool
Place the Brussels sprouts in the bowl with 2 tablespoons of Parmesan, a pinch of salt and pepper, and the extra virgin olive oil
Mix carefully until the ingredients are well combined
Place the Brussels sprouts on a baking tray lined with parchment paper and flatten each with the bottom of a glass to form fritters. If you want to see how I did it, watch here the video recipe from my Instagram profile!
Sprinkle the Brussels sprouts with Parmesan and breadcrumbs and bake in the oven at 355°F for about 6 minutes until golden. Serve immediately with tzatziki sauce and enjoy your meal!
