The sandwich with omelet and friggitelli, enriched with prosciutto and cheese slice, is an idea for a rich and tasty meal.
To make this recipe, I sautéed the friggitelli and prepared an omelet. Then I filled the sandwiches by creating alternating layers of: omelet, cheese slice, prosciutto, and friggitelli.
As a sandwich, I used pita bread (Arabic), but you can use any bread you like: each bite will be a burst of flavor!

Recipes with friggitelli

Ingredients
- 2 sandwiches
- 3.5 oz friggitelli
- 4 slices prosciutto
- 2 cheese slices
- to taste extra virgin olive oil
- 3 eggs
- 1 tbsp grated Parmesan
- to taste salt
- to taste sage (or parsley)
Steps
To make the sandwich with omelet and friggitelli, wash and clean the friggitelli, then remove their stems.
Pour some oil into a pan and heat it over a moderate flame.
When the oil is hot, add the friggitelli and cook them, turning to cook on all sides. Once cooked, drain them and place them on a plate.
In a bowl, beat the eggs with grated Parmesan, a pinch of salt, and some chopped sage.
Grease a pan, pour in the egg mixture, cover with a lid, and cook over low heat.
When the omelet is golden on the bottom, with great care, flip it and cook the other side.
Once cooked, transfer the omelet to a plate and cut it into squares.
Cut the sandwiches in half and proceed with the filling: create a layer of omelet, then place the cheese slice, then the prosciutto, then a layer of friggitelli, and finally another layer of omelet.
Close the sandwich and serve. Enjoy your meal!
