Brownies or Blondies

Brownies or Blondies are actually two similar desserts but they are not exactly the same thing.

Brownies are a cross between an unleavened cake and a soft cookie while Blondies, although very similar, replace vanilla with white chocolate and granulated sugar with brown sugar.

However, my daughter loves recreating the recipes she finds in American videos by making small modifications each time to make them with easily available ingredients and she prepared this recipe which is a nice mix between the two desserts. The recipe only called for white chocolate in the batter and 4/5 Kinder bars as decoration on top but not having them at home she used 2 bars and added a bit of white chocolate on the surface.

Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2/3 cup butter
  • 7 oz white chocolate (for mixing)
  • 1 1/3 cup all-purpose flour
  • 1 3/4 oz white chocolate (in pieces for decorating)
  • 2 Kinder chocolate bars
  • 1 3/4 oz dark chocolate chips
  • to taste vanilla extract

Tools

To prepare Brownies and Blondies, a rectangular or square pan is used because after baking they are cut into squares, it’s important to line it with parchment paper. In this recipe, a 22×22 cm pan was used

  • 1 Baking Pan
  • 1 Spatula
  • 1 Knife

Preparation

The preparation is very simple, we could do it completely by hand but we first helped ourselves with an electric mixer, then we added the flour by hand.

  • Break the white chocolate needed for the mixture into a bowl along with the butter and melt them in the microwave or in a double boiler. If you use the microwave, remember to stop and stir every 30 seconds or so to ensure it melts well without burning.

  • In a large bowl, place the eggs with all the sugar and start beating well until they are nice and fluffy. To make this process easier we use an electric mixer, but you could also use a hand whisk and a lot of arm strength 😂

  • When the eggs are nice and fluffy, add the melted chocolate and butter and mix to make the mixture smooth.

  • Now you need to proceed by hand using a whisk or a spatula and with circular movements from bottom to top, add the flour to avoid deflating the mixture.

  • Finally, always by hand and being careful not to deflate the mixture, add the chocolate chips and vanilla flavor.

  • Line the pan with parchment paper, trying to make it adhere well to the edges; to make this process easier, you can slightly butter the pan so the parchment paper sticks better.
Pour all the mixture into the pan and quickly decorate the surface with the broken Kinder bars and white chocolate. Break the chocolates in advance because you will need to add them quickly and bake immediately to prevent them from sinking into the batter.
Bake in a preheated oven at 350°F (180°C) for about 40 minutes, always do the toothpick test and check that the surface remains golden; if you see it darkening too much, cover your dessert with a sheet of aluminum foil.

  • The Brownies batter remains a moist batter, but check with the toothpick that it is cooked.

Remove from the oven and let your cake cool slightly but not completely. Removing it from the pan will be very easy thanks to the parchment paper you put in, so it will also be easier to let it cool slightly, and you can proceed to cut it after a short time.

NOTES

To cut, place the cake on the cutting board with all the parchment paper and, using a good kitchen knife with a smooth blade, proceed to create your squares.

I recommend trimming the edges first, which will likely be irregular, but they will be a good taste test for you who cooked 😍

Frequently Asked Questions

  • Can I use only Kinder on the surface?

Certainly, you can put about 5 bars to decorate the surface, and it will be even prettier to see.

  • Can brown sugar be used alone?

Absolutely, one difference between Brownies and Blondies is precisely this: the first uses only granulated sugar, the second only brown sugar. My daughter wanted to mix them because the taste of brown sugar always gives a very good and particular flavor.
