After the great success of Bimby water bread, I couldn’t resist trying the whole wheat version with sourdough. A great success, too good and flavorful. Easy and quick recipe for a crusty bread ready in one day. Try it yourself if you’re curious. We loved it a lot. And let’s face it, Homemade Sourdough gives the bread a completely different flavor.

Ingredients
- 23.3 oz water
- 6.3 cups flour (half 0, half whole wheat)
- 2 tsp salt
- 5.3 oz sourdough starter
- 1 cup water
- 2 tbsps lemon juice

Steps
Place 23.3 oz of water, sourdough, and flours in the bowl, mix for 20 seconds at speed 6. Let it rest in the bowl for 40 minutes.
Knead for 3 minutes at knead speed, add the salt and knead for another 3 minutes at knead speed.
Transfer the mixture onto a floured surface and fold a few times.
Shape into a loaf and transfer it onto the varoma lined with wet and oiled parchment paper.
Rinse the bowl and put water and lemon juice inside.
Place the varoma on the Bimby lid and set for 4 hours at 99°F fermentation mode. (Increase time if needed).
Preheat the oven to 482°F. Dust the oven tray with a little flour and set aside. Transfer the risen dough to the work surface and with your hands, stretch the dough into a rectangle without applying too much pressure. Fold ⅓ of the dough towards the center and fold again to form a loaf. Close the dough and place it on the prepared tray. Dust the surface with flour and use a bread scorer to make cuts on the surface.
Bake for about 30 minutes at 482°F then lower the temperature to 392°F and bake for another 15 minutes.
Let it cool on a rack and slice.

The fermentation mode is only available in the latest Bimby models. For others, I recommend letting the bread rise in a slightly preheated turned-off oven.
You can always use the varoma or a bowl.
