Onion Omelette

Onion omelette, a very quick dish to prepare that saved our lunch today! The omelette is a simple Italian dish prepared with just eggs, very nutritious and versatile because we can have it as a main course, as a single dish combined with vegetables or it is very convenient to fill sandwiches to eat outside, its consistency remains unchanged even cold.

Today was really a special day, me in bed with the flu and my husband coming home late from work, we could have opted for a piece of pizza instead I thought of preparing a simple onion omelette and it was very much appreciated.

It will take you only 10 minutes to prepare it and it will be a dish rich in protein and low in added fats because it requires only a drizzle of oil to fry the onions.

Ingredients

To prepare the onion omelette, you only need eggs and an onion.

  • 4 eggs
  • 1 onion
  • 2 tablespoons extra virgin olive oil
  • 3 g salt
  • to taste chili pepper
  • to taste pepper

Tools

Very important for easily making an onion omelette using very little added fats is to use a good non-stick pan and a flat lid to help you flip it.

Preparation

The preparation of the onion omelette is very simple and quick.

  • Peel and wash the onion then roughly slice it and put it in the pan with a drizzle of oil and a pinch of chili pepper; Put it on the stove, turn up the heat and cover with the lid, the onion must brown well but not burn.

  • While the onion is browning, crack the eggs into a deep plate, salt them and add a bit of pepper; with the help of a fork, beat the eggs roughly, they should not be completely homogeneous, a good omelette is seen by its heterogeneous texture, it should not be a crepe!

  • When the onion is well browned, always on high heat and without adding more oil, pour the eggs over the onion and cover again with the lid. After a little more than a minute, your omelette will be ready to be flipped, if when you lift the lid the center is still liquid, make small holes in the omelette with a wooden spoon as you can see from the video and the liquid will set immediately.
    When the omelette is set, using the lid, flip it completely over itself and reposition it in the pan to brown the other side as well. In less than 5 minutes total, the eggs will be cooked.

  • Once cooking is finished, transfer your omelette to a serving plate and enjoy as you prefer

NOTES

To prepare the onion omelette, I used a large pan because I like the omelette thin, but if you prefer it thicker, just use a narrower pan.

  • Why do you use both chili pepper and pepper?

    Because in my opinion, they enhance each other, obviously without overdoing it, but they give the eggs with added “vegetables” a special flavor. If I make an omelette with just eggs, I only use pepper.

  • Which onion should I use?

    All onions go well in an onion omelette, I prefer red ones for their texture but with white ones, it will be much “sweeter”.
