Vegan tart with jam, without milk or eggs, therefore also suitable for those intolerant to these foods. I decided to make this tart for my niece, but I didn’t think I would like the result so much. With this recipe, you get a very elastic shortcrust pastry that can be used to make excellent tarts, as well as cookies, cream tarts, and whatever your imagination suggests. In this recipe, I filled it with simple jam in two different flavors, but as with all tarts, it is up to you to decide how to fill it after preparing the pastry. With this recipe, you can prepare two tarts with a diameter of 9 inches; therefore, if you want to prepare just one tart, halve the shortcrust pastry doses or after preparing the tart use the remaining dough to create cookies.

Shortcrust Pastry Ingredients
With these quantities, you can make two 9 inch tarts; otherwise, halve the quantities.
- 4 cups all-purpose flour
- 1 cup sugar
- 1 cup vegetable margarine
- as needed vanilla flavoring
- 6 tbsp water
- 1/2 teaspoon Kala Namak
- 1 tsp baking powder
- 1/2 cup apricot jam
- 1/2 cup sour cherry jam

To knead the shortcrust pastry, I recommend the stand mixer with the paddle attachment, but you could also do it by hand.

Preparation
The preparation of the shortcrust pastry is very simple, and if you use the stand mixer, it will take you just a few minutes to get a very elastic pastry.
Place all the shortcrust pastry ingredients in the stand mixer with the paddle attachment. Dissolve the Kala Namak salt in the warm water, start the stand mixer at moderate speed, and let it knead until the pastry detaches from the sides.
Remove the pastry from the mixer bowl and place it on a lightly floured work surface. Divide it in two and start rolling a round using the rolling pin to cover the first baking pan. Fill with jam; I used two types to have different flavors. Roll another piece of pastry slightly thinner and cut the strips to decorate your tarts. Seal the edges by pressing the pastry inward with the tip of a floured fork. You will find it easy to understand these steps by following the video I uploaded above.
Finally, bake your tarts in a preheated oven at 356°F for about 20/25 minutes, making sure they are golden brown on the surface.
NOTES
With this dose, you will get two tarts, or you can prepare one tart and with the remaining pastry make cookies that are excellent at any time of the day. The tart will keep well at room temperature for 3/4 days; I recommend storing it in a cake container with a lid.
