The Vin Santo treats are cookies without milk or eggs, and we can define them as vegan.
This recipe was given to us many years ago by the great Anna Moroni in one of her cookbooks, and these are fantastic treats that are easy to make and delicious. You can have fun making these treats with your kids because the dough can be made entirely by hand. For convenience and a bit of laziness, I use a stand mixer, but it’s really avoidable!
The original recipe calls for raisins and pine nuts, but I don’t particularly like raisins, so I replaced them with dark chocolate. I have to say that every time I make these cookies, I don’t have time to store them because they disappear immediately.

Dough Ingredients
The ingredients to make these treats are very simple to find in our kitchens. Perhaps the only particularity is the pine nuts, which not everyone is in the habit of buying, but they are easily found in supermarkets.
- 4 cups all-purpose flour
- 7 oz vin santo
- 1 cup sugar
- 7 oz dark chocolate (or chocolate chips)
- 2/3 cup pine nuts
- 7 oz corn oil
- 1 packet baking powder
- 1 pinch salt
Dough Tools
These treats can be kneaded directly in a bowl by mixing with a simple spoon. For convenience, I use a stand mixer with a paddle attachment. To shape them, your hands will be enough!

Dough Steps
The dough for these treats is very easy. You can add all the ingredients at once and simply mix to make everything homogeneous.
Combine all the ingredients described in the bowl and mix until the dough is homogeneous, it will take about 2 minutes
Flatten a bit of dough between your hands and form small mountains of dough to place on the baking tray covered with parchment paper. Place them a bit apart from each other because they will grow a bit while baking.
Bake the treats in a preheated oven at 356°F for about 15 minutes. They should be golden as you can see from the photo
Storage and Tips.
These treats keep very well, even for a week, when closed in a cookie jar. They will remain just as they were the day you made them, but rest assured they will be gone quickly! If you like, you could serve them with a bit of powdered sugar on top, but I think it’s not necessary as the taste is already exceptional as is.
