Yogurt Bundt Cake

The bundt cake, for me, remains the quintessential homemade dessert; it reminds me of my childhood and is always present at home because it perfectly suits various times of the day.
There are many variations of the bundt cake, and this time I wanted to prepare a yogurt bundt cake. The result was a super soft bundt cake. Personally, I used homemade Kefir, but you can use plain yogurt, whichever you prefer. I recommend using low-fat yogurt for this cake.
This version of the yogurt bundt cake does not include many fats and is easily digestible.

Yogurt Bundt Cake Batter

  • 4 eggs
  • 1 1/4 cups sugar
  • 7 oz plain yogurt
  • 1/2 cup vegetable oil
  • 2 1/2 cups all-purpose flour
  • 1/4 cup potato starch
  • vanilla flavoring (or your preferred flavoring)
  • 1 packet baking powder

Tools for Making the Yogurt Bundt Cake

  • 1 Stand Mixer
  • 1 Bundt Cake Pan

To make the yogurt bundt cake, I used my stand mixer with a whisk attachment, and I must say the batter was ready in just a few minutes!

Preparation

  • Place the 4 whole eggs and granulated sugar in the mixer bowl and mix until the eggs are pale.

  • Add the yogurt, then the oil, and slightly reduce the mixer’s speed.

  • Gradually add the flour and potato starch, incorporating the flavoring of your choice, and lastly, the packet of baking powder.

  • Grease and flour a bundt cake pan with a 10-inch diameter and pour in the entire batter.

  • Bake the yogurt bundt cake in a preheated oven at 350°F for about 35 minutes; always check with a toothpick before removing from the oven.

  • Let the yogurt bundt cake cool and enjoy!!

NOTES

I store the yogurt bundt cake in a classic glass cake container with a lid, and it keeps well for 3-4 days.
