Sicilian Fennel

Sicilian fennel is a tasty vegetarian side dish, easy to prepare.

Simple ingredients like fennel, cherry tomatoes, black olives, and oregano, cooked in a pan for a fragrant and irresistible dish, lactose-free, egg-free, and gluten-free, perfect to accompany any type of main course, meat or fish.

Ingredients

  • 2 fennel bulbs
  • 15 cherry tomatoes
  • 1 clove garlic
  • black olives
  • Half cup white wine
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Sicilian Fennel

  • Clean the fennel, wash it, and cut it into wedges.
    Wash the cherry tomatoes and cut them in half.
    Peel the garlic clove.

  • In a pan, heat a few tablespoons of extra virgin olive oil and brown the garlic.
    Add the fennel and brown on all sides, then add the cherry tomatoes and deglaze with the white wine.
    Let the alcohol evaporate, season with salt, add a handful of black olives, a sprinkle of oregano, and a little water, cover with a lid, and let cook for fifteen minutes, stirring occasionally and adding more water if the cooking liquid evaporates too much.

  • When the fennel is cooked, remove the lid and turn up the heat to reduce the cooking liquid.
    Turn off the heat, let cool slightly, and serve your Sicilian fennel.
