Ingredients
- 10.5 oz broccoli
- 1 cup rice flour
- 1/2 cup water
- 1 tbsp grated parmesan
- to taste corn flour
- to taste salt
- to taste extra virgin olive oil

Steps
To prepare the broccoli flatbread, wash and trim the broccoli, cut it with a knife, separating the florets from the stem.
Cook the broccoli florets in plenty of boiling water. Once ready, drain them and let them cool down.
Place the broccoli in a bowl, add the rice flour, a drizzle of extra virgin olive oil, a sprinkle of grated parmesan, salt, and pour in the water. Mix until obtaining a homogeneous mixture.
Line a baking pan with parchment paper and grease it. Sprinkle the base with corn flour and pour in the mixture.
With the help of a spoon, spread the mixture on the pan, leveling well. Sprinkle the surface with more corn flour, parmesan, and drizzle with extra virgin olive oil.
Bake in a preheated oven at 392°F for 20-25 minutes until golden.
Once ready, let it cool down a bit and then cut it. Serve and enjoy!
