The caprese in a glass is a reinterpretation of the namesake and very famous summer dish, which I decided to make inside a glass, where as a base I added some crumbled friselle, to give the dish that crunchy note that makes it truly irresistible!

Ingredients
- 9 oz burrata
- 9 oz cherry tomatoes
- to taste friselle
- basil
- extra virgin olive oil
- salt
- pepper
Steps
Cut the cherry tomatoes in half then place in the bowl with oil, some chopped basil leaves, and a pinch of salt and pepper. Mix carefully and season with salt and pepper. Let rest for 30 minutes
Take the friselle, place them in a freezer bag and, using a meat tenderizer, break them into pieces
Slice the burrata into thin slices
Finally, assemble the glasses: place the crumbled friselle at the base, lightly moisten with the maceration juice of the cherry tomatoes, place the burrata on top, and finally the cherry tomatoes. And here is our caprese in a glass ready! Bon appétit!
