Ingredients
- 1 bunch asparagus
- 1 egg
- 3/4 cup all-purpose flour
- 1/3 cup Grana Padano DOP
- 1 tsp instant yeast for savory preparations
- 1 tsp salt
- peanut oil
- to taste chilled sparkling water

Steps
Wash and clean the asparagus, trim the woody ends and remove the toughest parts with a vegetable peeler
Heat water with a pinch of coarse salt in a large tall-sided saucepan. When the water begins to boil, drop in the asparagus and cook for about 10 minutes until they are tender. Drain and pat dry carefully with paper towels
In a bowl, beat the egg with a pinch of salt. Add the flour with the instant yeast, grated Grana Padano, and enough chilled sparkling water to obtain a thick batter without lumps.
Cut each asparagus into 3 parts until all ingredients are used
Place the asparagus into the batter bowl and gently mix until fully coated
Heat peanut oil to a temperature of 340°F, dip a few asparagus at a time. Cook until they are puffy and golden. Drain and place on a plate lined with paper towels.
