The puff pastry with peppers and ricotta is a tasty and genuine idea for an aperitif, or as an appetizer sliced, which I often prepare for friends when I want to offer something ultra delicious, but have little time to spend in the kitchen.

Ingredients
- 1 roll rectangular puff pastry
- 1 red bell pepper
- 1 yellow bell pepper
- 1 cup ricotta
- 2 oz Grana Padano DOP
- 1 bunch basil
- salt and pepper
- 1 clove garlic
- chopped parsley
- salt and pepper
- extra virgin olive oil

Preparation of puff pastry with peppers and ricotta
Cut the peppers in half, remove the seeds with the white filaments, grill them on the plate or in the pan until they are soft and roasted. Let cool and remove the skin.
Cut the peppers into strips and place in a bowl with the peeled and finely chopped garlic, a drizzle of extra virgin olive oil, and fresh chopped parsley. Season with salt and pepper, mix well and set aside.
In the bowl, pour the ricotta, add the chopped basil leaves, a pinch of salt and pepper, and 1/3 cup of Grana Padano. Work with a spoon until it becomes creamy.
Take the puff pastry roll out of the refrigerator and unroll it on the parchment paper. Poke the pastry except for the edges.
Spread the ricotta on the puff pastry leaving the edges free, decorate with the peppers and sprinkle with grated Grana Padano.
Fold the edges of the pastry inwards to form a crust
Place the puff pastry along with the parchment paper on the baking tray and bake in a preheated oven at 350°F for about 20 minutes, remove from the oven and let cool slightly. Enjoy, find all the video recipes on my Instagram profile @isaporidicasa
