Fennel Flatbread

The fennel flatbread is a tasty vegan and gluten-free idea, perfect for enjoying as a main dish or for a home aperitif with friends. Making this flatbread is quick and easy: just prepare a mixture with fennel, water, and rice flour; then the mixture is poured into a baking dish and seasoned with oil and corn flour. Once baked in the oven, you will have an irresistible flavored flatbread!

Fennel Flatbread

Ingredients

  • 10.5 oz fennel
  • 1 cup rice flour
  • 1/2 cup water
  • 1 sprig oregano
  • to taste extra virgin olive oil
  • to taste salt
  • to taste corn flour

Steps

  • To make the fennel flatbread, use a mandoline to slice the fennel thinly.

  • Place the fennel in a bowl, add the rice flour and oregano. Add a drizzle of extra virgin olive oil, salt, pour the water slowly, and mix until you get a homogeneous mixture.

  • Line a baking pan with parchment paper and grease it. Sprinkle the base with corn flour and pour the fennel mixture.

  • Use a spoon to spread the mixture evenly on the pan. Sprinkle the surface with more corn flour and drizzle with extra virgin olive oil.

  • Bake in a preheated oven at 392°F for 20-25 minutes until golden brown.

  • Once ready, let it cool slightly, then cut. Serve and enjoy your meal!
