Ingredients
- 2 cups all-purpose flour
- 3/4 cup potato starch
- 2 medium eggs
- 1/4 cup soft butter
- 2 orange zest
- 2 tablespoons milk
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 tablespoon rum
- orange juice

Preparation of baked castagnole
In the bowl, place the flour with the potato starch, the grated zest of two oranges, the eggs, the milk, the soft butter cut into cubes, the sugar, and a tablespoon of rum
Quickly knead with your hands until you form a compact ball. Wrap it in plastic wrap and let it rest in the fridge for 30 minutes. To speed things up, you can put the ingredients in the food processor and knead at medium speed for 30 seconds. If the dough is too soft and sticky, add one or two tablespoons of flour.
After the resting period, form small balls of 10 grams each and place them on a baking tray lined with parchment paper, well spaced out. Bake in a preheated oven at 356°F (180°C) for 10 minutes
Squeeze the juice of the two oranges
Remove the castagnole from the oven and soak them in orange juice, alternatively, you can use alchermes, rum, limoncello, or nesquik
After soaking, roll them in granulated sugar and place them on a tray. Enjoy your meal!
