Have you ever tried blending shredded coconut (coconut flakes) in the food processor? You’ll get a delicious homemade coconut butter with just one ingredient. I had a jar of coconut flour in the kitchen that I hadn’t used for a while, so I decided to experiment: given the excellent results obtained with almond or peanut butter, I blended it in the food processor. It takes a few minutes to achieve a creamy butter, perfect to enjoy at breakfast on slices of bread, or it can be used as an ingredient in preparations like porridge or ice cream.

Steps
To make the coconut butter, pour the coconut into the mixer (or food processor or blender) and set it to low speed.
Blend until you achieve a creamy consistency. It will take around 10-15 minutes, depending on the power of the mixer.
To avoid overloading the mixer, if it gets too warm, take small breaks or pulse the blades.
Once the coconut releases its essential oil, you’ll get a smooth cream.
Pour the coconut butter into a glass jar with a lid and store it outside the fridge, using it shortly.
