Welcome back friends! Today I want to show you the focaccia with artichokes and pecorino, made with a highly hydrated “no-knead dough” and a rising time of three hours to achieve a very soft and fluffy bread, perfect to serve to your friends during aperitivo.

Ingredients
- 4 cups type 1 flour (w 300 with 13% protein)
- 1 2/3 cups water
- 1 tsp dry yeast
- 1/2 tsp sugar
- 1 1/4 tsp salt
- 7 oz artichokes in oil
- 3.5 oz pecorino romano
- extra virgin olive oil

Steps
Put the flour in the bowl, make a well in the center and add the dry yeast with the sugar, pour in the water at room temperature, and mix with a fork. Only add the salt at the end and continue mixing with the fork until the mixture is very soft and sticky. Cover the bowl with plastic wrap and let it rest for an hour.
After the time has passed, you will see that the mixture has increased in volume. In a separate bowl, fill it with some water. Remove the plastic wrap from the bowl, moisten your hands with the water, and do 3 rounds of folds, pulling the dough and bringing it towards the center (you can see in the video here how I did it) until you form a puffy and very soft ball. Cover the bowl again with plastic wrap and let it rest for another hour.
After the second hour, you will see that the mixture has bubbles on the surface, pour it into the tray lined with parchment paper, always using moistened hands and spread it on the tray forming small dimples with your fingertips. Let it rise for another hour covered with a cloth.
After the third and final hour of rising, drizzle the surface with extra virgin olive oil, add the artichokes in oil slightly pressing them into the dough, and sprinkle with grated pecorino romano. Bake in a preheated oven at 355°F for about 25-30 minutes until golden. Remove from the oven and enjoy!
