Baked Pumpkin Crumble

The baked pumpkin crumble is a rich and tasty idea to serve at the table as a main course. This recipe is easy to make and is baked directly in the oven.
I grated the raw pumpkin and added bacon and cheese. Then I poured the mixture into a baking dish and covered it with a bread and cheese crumble. Once baked, you will serve a delicious and irresistible flavored dish. For a dinner with friends, you can make the pumpkin crumble in individual ramekins, making it easier to serve.

Baked Pumpkin Crumble

Ingredients

  • 1.1 lbs pumpkin (peeled)
  • 2.8 oz bacon (diced)
  • 1.8 oz mixed caciotta cheese (or taleggio or gorgonzola)
  • to taste sage
  • to taste extra virgin olive oil
  • to taste salt
  • 2 slices stale bread
  • 1 oz butter
  • 0.7 oz grated Parmesan cheese

Steps

  • To make the baked pumpkin crumble, grate the pumpkin flesh using a wide-holed grater, collecting it in a bowl.

  • In a small pan, lightly toast the diced bacon without adding oil until it becomes crispy.

  • Add the bacon cubes and diced cheese to the pumpkin. Season with salt, extra virgin olive oil, and sage, mix and set aside.

  • Prepare the crumble: in the blender, place the pieces of broken stale bread, grated Parmesan cheese, and cold cubed butter.

  • Blend intermittently until a crumbly mixture is obtained, being careful not to overheat it.

  • Pour the pumpkin into a baking dish and level with the back of a spoon. Spread the crumble over the layer of pumpkin until fully covered.

  • Bake in a preheated oven at 356°F (180°C) for about 40 minutes or until golden brown. Serve the pumpkin crumble in the dish hot or warm.
