Cut the dates lengthwise, gently opening them like a book, and remove the pit.
Separately, in a bowl, work the gorgonzola with a spoon until creamy. Fill each date with the gorgonzola and gently close. Garnish each with the chopped pistachios and refrigerate for two hours until serving time. Enjoy your aperitif!
