Ingredients

  • 4 cups all-purpose flour
  • 10.5 tbsp butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp baking powder
  • 1.5 tbsp milk
  • 1 pinch salt
  • 1 packet vanillin
  • to taste cherry jam (about 12-14 oz)

Steps

  • In a bowl, quickly work the softened butter with the sugar using a whisk until you get a cream. Incorporate one egg at a time and the pinch of salt, add milk, baking powder, vanillin, and gradually the sifted flour. Continue working the dough until you get a compact ball that does not stick to your hands. This dough can be worked immediately, but if it’s too soft, you can put it in the fridge for half an hour and then work it.

    Using a rolling pin, roll out the dough on a floured board until you reach a thickness of about 1/8 to 1/4 inch. Place a part of it in a previously buttered and floured pan, add the cherry jam, place strips of shortcrust pastry on top, and if you want to decorate it like my tart, create a cherry in the center with two discs, two strips, and two little leaves of shortcrust pastry (if you want to color it, use natural food colorings! I used powdered ones!).

Bake at 350°F for 30/35 minutes on the second-to-last rack of the oven!

Once baked, let the tart cool before serving, so the jam slightly sets.

Storage

The cherry jam tart keeps well for 3-4 days under a glass dome or in an airtight container at room temperature.

If you prefer, you can also store it in the fridge to keep it fresh longer. In this case, make sure to cover it properly to prevent it from absorbing other odors in the fridge. When you want to serve it, it’s advisable to let it return to room temperature to fully enjoy the flavor and crumbliness of the shortcrust pastry.
