Baked Pasta with Cherry Tomatoes, Speck, and Mozzarella

Baked pasta with cherry tomatoes, speck, and mozzarella is a rich and delicious first course. This recipe is ideal for Sunday lunch or when you crave a hearty pasta. Making this baked pasta is very easy and requires simple ingredients that you likely already have in the fridge: speck, mozzarella, and cherry tomatoes. Instead of mozzarella, you can use slices of cheese that melt into a stringy delight. You will bring a very succulent dish to the table that will delight the whole family!

Baked Pasta with Cherry Tomatoes, Speck, and Mozzarella

Ingredients

  • 6.3 oz pasta
  • 3.5 oz mozzarella
  • 7.1 oz cherry tomatoes
  • 1.8 oz diced speck
  • to taste dried oregano
  • to taste grated Parmesan cheese
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To make the baked pasta with cherry tomatoes, speck, and mozzarella, lightly brown the garlic clove in a pan with a drizzle of extra virgin olive oil. Then add the speck, diced or sliced into strips, and let it brown for a few minutes.

  • Wash and clean the cherry tomatoes, then cut them into quarters and add them to the pan with the speck. Salt (if in season, you can add some basil leaves), add a glass of hot water if necessary, and let cook for about ten minutes.

  • Cook the pasta in abundant salted boiling water; once cooked (preferably al dente), drain it, and mix it with the sauce, adding a sprinkle of grated cheese.

  • In a baking dish, spread a little sauce on the surface and then add some penne. Cut the mozzarella into thin slices and distribute half on top of the pasta, cover with the remaining penne, and cover with the mozzarella slices.

  • Sprinkle with oregano and bake in the (ventilated) oven preheated to 392°F (200°C), until the mozzarella is melted and the pasta starts to brown. Serve hot and enjoy your meal!
