Ingredients
- 1.5 lbs pork loin
- 1 cups full-bodied red wine
- Half onion
- 1 carrot
- 1 celery stalk
- 2 tbsp sweet paprika
- 3 tbsp flour
- 2 ladles beef broth (boiling)
- 1 sprig rosemary
- 1 leaf bay leaf
- salt
- pepper
- extra virgin olive oil

Steps
Cut the pork loin into small, equal pieces
Place the pieces in the bowl with flour and sweet paprika, mix carefully and set aside
Put chopped carrot, celery, and onion in the saucepan, add a drizzle of oil and sauté
Add the meat and brown it over low heat for 3-4 minutes, stirring frequently
At this point, pour in the red wine, increase the heat and let it evaporate. Add the rosemary sprig and bay leaf.
Add the boiling beef broth, lower the heat and let the meat simmer for about an hour and a half. The cooking time clearly depends on the cut and consistency of the meat, so pay attention to the cooking process, stir occasionally, and when the meat has formed a very creamy cooking base and a fork enters the meat easily, it will be ready. Adjust with salt and pepper. Serve the pork loin stew in red wine with grilled polenta and enjoy your meal!
