The spinach puffs are a very tasty appetizer, made with homemade puff pastry and then filled with spinach and Parmesan cheese.

Ingredients
- 2 cups all-purpose flour
- 5.6 oz salted butter (cold)
- 0.4 cup water (cold)
- Half teaspoon salt
- 14 oz spinach
- 1 clove garlic
- 1.5 cups grated Parmesan cheese
- salt
- pepper
- 3 tablespoons extra virgin olive oil
- 2 egg yolks
- 4 tablespoons milk

Steps
Put the all-purpose flour in the bowl, add the cold butter in pieces, the salt, and slowly the ice-cold water.
Knead quickly with your hands to form a compact ball. Wrap the dough in plastic wrap and let it rest in the refrigerator for one hour.
Wash the spinach under running water, put them in a pan with a drizzle of oil and the clove of garlic and cook over low heat for ten minutes. At the end of cooking, remove the garlic and season with salt and pepper
Take the dough out of the fridge and cut it into two equal parts. Roll out the first sheet on a floured work surface and cut out 12 rectangles measuring approximately 3 inches by 1.5 inches. Take the second part and do the same to create another 12 rectangles
Place the spinach in the center of 12 rectangles and sprinkle generously with grated Parmesan cheese
Cover the filled rectangle with another rectangle of puff pastry, pressing along the edges with your fingertips
With a sharp knife, make diagonal cuts along the surface. Now that your 12 puffs are ready, place them on a baking sheet lined with parchment paper. Separately, beat the egg yolks with the milk and brush the surface of each puff.
Bake in a preheated oven at 355°F for about 20 minutes. Remove from the oven and bring them to the table while still hot and…enjoy your meal!
