Smoky gnocchi is a very tasty first course, composed of a sauce based on tomato, bacon, and smoked provola, hence the name ‘smoky’.

Ingredients
- 1.1 lbs potato gnocchi
- 1.7 cups tomato passata
- 1 clove garlic
- 7.8 oz smoked bacon
- 8.8 oz smoked provola
- salt
- pepper
- oregano
- extra virgin olive oil
- Half glass dry white wine

Steps
In a pan, add a drizzle of oil with the garlic clove in its skin and sliced smoked bacon. Cook over high heat, stirring frequently, until the bacon is browned.
Deglaze with the white wine and let it evaporate
Pour in the tomato passata, lower the heat, and continue cooking for another 20-25 minutes. Season with salt, pepper, and oregano to taste. If you don’t like oregano, you can replace it with some basil leaves.
Cook the gnocchi in a pot of boiling salted water. Drain them with a slotted spoon once they float to the surface. Add them to the pan with the tomato sauce and add the diced smoked provola.
Toss over high heat until the provola is well combined with the sauce and gnocchi. Serve immediately and enjoy your meal!
