Shortbread Hearts with Jam

Shortbread hearts with jam are the ideal treats to give on special occasions.

Based on oil shortcrust pastry that does not require resting in the fridge like traditional ones, these cookies are really easy to make.

The contrast between the crunchiness of the shortcrust pastry enriched with chocolate chips and the sweetness of the cherry jam, which I chose to use in a light version, really conquered everyone who was lucky enough to taste them.

In short, an easy and delicious recipe at the same time.

Moreover, the shortbread hearts with jam keep well, staying crisp, so you can also prepare them a few days in advance. Of course, the shortcrust pastry can also be prepared in advance, but instead of leaving it to rest in the fridge, I recommend freezing it as the oil tends to slightly seep out during the rest.

Ingredients

  • 3 1/3 cups type 1 flour (or all-purpose)
  • 4 large eggs
  • 2/3 cup sugar
  • 1/2 cup rice oil (or olive oil)
  • 1/2 cup chocolate chips
  • 1 teaspoon baking powder
  • 7 oz light cherry jam
  • powdered sugar

Steps

After preparing the oil shortcrust pastry as per the recipe, roll out on a lightly floured surface to a thickness of 0.2 inches (use rolling pins marked with number 5) and cut out the shapes.

  • Place the hearts, as you form them, on a baking tray on the silicone mat or parchment paper and, with the rounded edge of a teaspoon handle, make the smaller hearts inside the larger ones, pressing lightly (enough to fill them).

  • Fill the heart cavities with the jam placed in a piping bag without a nozzle, (this way there will be no smudges).

  • Bake the shortbread hearts with jam for 13/15′ at most in a preheated oven at 356°F.

FAQ (Frequently Asked Questions)

  • I don’t have rolling pins, how should I proceed?

    Just roll out the shortcrust pastry not too thin, considering that it will rise during baking due to the baking powder.

  • What if I want to use Nutella instead of jam?

    Sure, you can use it, just be careful not to let it dry out too much. Maybe add a thin layer after baking.

  • Can I use regular shortcrust pastry instead of oil shortcrust pastry?

    I recommend using yogurt shortcrust pastry which contains baking powder.
