Rice salad with ham and melon is a great one-dish meal to serve cold, combining two of my favorite summer foods. A tasty yet original idea if you want to serve your rice inside melon shells during a dinner with friends.

Ingredients
- 1.5 cups salad rice
- 2 cantaloupe melons
- 7 oz prosciutto
- 7 oz primosale cheese
- 1 bunch basil
- salt
- pepper
- extra virgin olive oil

Steps
Rinse the rice thoroughly under running water in a colander to remove the starch. Cook the rice in salted water, drain, put it in the bowl with a drizzle of oil, stir, and let it cool.
Cut the melons in half, remove the seeds with a spoon, and use the melon baller to create small balls.
Cut the prosciutto into strips.
Now add the diced primosale cheese, melon, prosciutto, and torn basil leaves to the rice. Season with a pinch of pepper and a drizzle of oil, mix carefully, and let rest in the refrigerator for at least an hour before serving. Enjoy your meal!
