The extra soft apricot cake is a pantry dessert perfect for a snack or breakfast, very simple to make and so soft it melts in your mouth.

Ingredients
- 2 cups all-purpose flour
- 10.5 oz ripe apricots
- 5.3 oz butter
- 1/2 cup sugar
- 4 eggs
- 2 tbsp milk
- 1 tbsp rum
- 1 packet baking powder
- as needed powdered sugar

- Cake Pan 8 inches in diameter

Steps
In a bowl, work the butter at room temperature, cut into small pieces, with the sugar, until you get a fluffy cream
Add the eggs and continue mixing with the electric beaters
Pour in the flour, baking powder, milk, and rum, and mix for 5 minutes until you have a smooth and airy mixture.
Butter and flour a pan with a diameter of 8 inches. Pour half of the batter into it and level with a spatula
Lay the sliced apricots and pistachio bits on top. Cover with the other half of the batter, level with a spatula, and bake in the oven at 356°F for 40 minutes. Remove from the oven and let it cool completely before taking it out of the pan. Dust with powdered sugar and serve. Enjoy your meal!
