The chickpea and ricotta meatballs are the idea for an appetizer but are also perfect as a main course, quick and very tasty. They are prepared in a flash and are loved by everyone in my house!

Ingredients
- 11.3 oz cooked chickpeas, boiled
- 1 cup ricotta
- 1 egg
- 1/3 cup Parmesan cheese
- 1 clove garlic
- salt
- pepper
- chopped parsley
- peanut oil

Steps
Put the cooked chickpeas, ricotta, egg, grated Parmesan, minced garlic, and a tablespoon of chopped parsley into the food processor. Blend until smooth and creamy.
Transfer the mixture into a bowl, add enough breadcrumbs to achieve a soft yet firm consistency. Season with salt and pepper.
With hands slightly oiled, form balls the size of a walnut. Roll each ball in breadcrumbs.
