The rice with crispy chicken and peas is a tasty and nutritious first course, also ideal as a single dish. To make this recipe, I used chicken breast, cut into strips, which I then breaded with oil, parmesan, curry, and breadcrumbs. To make this rice light, I cooked the chicken bites in the air fryer; alternatively, you can cook them in the oven or fry them in hot oil. I seasoned the boiled rice with the crispy chicken and peas cooked in a skillet.

Ingredients
- 1 cup rice
- 7 oz chicken breasts
- 1 tsp dried oregano
- 1 tsp curry
- 1 tbsp grated parmesan
- 4 tbsp breadcrumbs
- 3 1/2 oz peas
- to taste leek
- to taste extra virgin olive oil
- to taste salt
Steps
To prepare the rice with crispy chicken and peas, cut the chicken into bites or strips.
Place the chicken bites in a bowl, season with a drizzle of extra virgin olive oil, oregano, curry, and parmesan. Finally, add the breadcrumbs and mix everything with a spoon.
Place the chicken bites in the air fryer basket lined with lightly oiled parchment paper. Cook at 392°F for 15 minutes, or until golden.
Alternatively, bake them in a preheated oven at 392°F for 20 minutes, or until golden. As another option, fry the chicken bites in hot oil.
In a skillet, pour a drizzle of extra virgin olive oil and the chopped leek. Cook on low heat and let the leek soften slightly.
Then add the peas, cover completely with hot water, and cook the peas. Salt at the end of cooking.
After that, add the chicken bites and let them brown slightly with the peas.
Cook the rice in boiling salted water, following the instructions on the package. Once ready, drain and add it to the peas and chicken, mixing to combine the ingredients.
Serve and enjoy your meal!
