Wafer and Coconut Truffles

The wafer and coconut truffles are delightful treats made without baking and with just four ingredients. I’ve made delicious balls with wafers, shredded coconut, and white chocolate; then I placed a hazelnut in the center and finally rolled the balls in shredded coconut. Easy and quick to make, these truffles will be gone in no time!

Wafer and Coconut Truffles
  • Difficulty: Very Easy

Ingredients

  • 7 oz coconut wafers (or vanilla wafers)
  • 2 tbsps shredded coconut
  • 2.5 oz white chocolate
  • 15 hazelnuts
  • as needed shredded coconut (for finishing)

Steps

  • To make the wafer and coconut truffles, pour the wafers into the blender bowl and blend until you get a sandy mixture.

  • In a bowl, pour the crushed wafers and two generous tablespoons of shredded coconut. Melt the white chocolate in a double boiler and pour it into the bowl with the wafers and coconut.

  • Mix the ingredients with a spoon, cover the bowl with plastic wrap and let it rest in the refrigerator for an hour.

  • Then take a bit of the mixture with your hands, place a hazelnut in the center, and form balls the size of a walnut, or as desired.

  • Once the mixture is finished, roll each ball in shredded coconut.

  • Put the truffles in the fridge and serve as needed. Enjoy!
