Chicken Strips with Artichokes, Fava Beans, and Peas

Chicken strips with artichokes, fava beans, and peas are a tasty main dish enriched with vegetables. I made these chicken strips cooked in a pan with vegetables and legumes; a spring recipe in which I used carrots, cherry tomatoes, bell peppers, artichokes, fava beans, and peas. A colorful main course but above all rich in flavor!

Chicken Strips with Artichokes, Fava Beans, and Peas

Ingredients

  • 10.5 oz chicken breast
  • 1 carrot
  • 1 bell pepper
  • 5 cherry tomatoes
  • 2 artichokes (large)
  • 1.8 oz fava beans (shelled)
  • 1.8 oz peas
  • to taste leek
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To prepare the chicken strips with artichokes, fava beans, and peas, cut the chicken breast into strips.

  • Make a mince of leek and carrots, put it in a pan with a drizzle of extra virgin olive oil, and cook on a low flame.

  • Then add the cherry tomatoes cut in half and the bell pepper cut into strips, and continue cooking.

  • Clean the artichokes and cut them into wedges. Add the artichokes, fava beans, and peas to the vegetables. Pour in hot water until the mixture is almost completely covered and cook over low heat.

  • When the vegetables are almost cooked, add the chicken strips and cook them with the vegetables. Let the sauce reduce slightly; if it dries too much, add a splash of water. Salt at the end of cooking.

  • Serve hot and enjoy your meal!
