The Frittatensuppe, literally translated as “pancake soup,” is a typical dish of Austrian cuisine, also very popular in South Tyrol, consisting of rolled and finely sliced crepe noodles, served with hot meat broth. A perfect first course for cold winter days!

Ingredients
- 4 eggs
- 2/3 cup milk
- 1/2 cup all-purpose flour
- 3.5 tbsp butter
- 2 tbsp chives
- 4 cups vegetable broth
- salt and pepper

Steps
In the bowl, mix the flour with the milk until you obtain a lump-free batter. Add the beaten eggs, chives, salt and pepper.
Mix with the whisks until you get a smooth, lump-free batter, let it rest for 20 minutes.
Melt 1.5 tbsp of butter in a non-stick pan, pour a ladle of batter and let the crepe cook for 2 minutes, flip it with a spatula and cook for another minute. Place the crepe on the plate and continue making the other crepes, greasing the pan with butter each time.
Roll the crepes and cut them into 1/4 inch slices.
Place the crepe portion on the plate and pour a ladle of hot broth over it. Sprinkle with grated Grana Padano cheese and serve. Enjoy your meal!
