The white pizza with tuna, roasted cherry tomatoes, and arugula and Parmesan shavings is a fresh and tasty idea to enjoy for dinner. For this recipe, I made a delicious white pizza, baked in the oven with just a drizzle of oil. Once out of the oven, I topped it with tuna, roasted cherry tomatoes (alternatively you can use confit cherry tomatoes), a handful of arugula, and a few Parmesan shavings. Also delicious cold, this pizza will win you over with its intense flavor!

Ingredients
- 2.5 cups all-purpose flour
- 3/4 cup water
- 1 tsp fresh yeast
- 1 tbsp extra virgin olive oil
- 1 tsp salt
- 7 oz canned tuna in oil (drained)
- to taste arugula
- to taste Parmesan shavings
- 3 oz roasted cherry tomatoes
Steps
To make the white pizza with tuna, roasted cherry tomatoes, and arugula, crumble the fresh yeast into a small bowl and add room temperature water. Stir until the yeast is completely dissolved.
In a large bowl or stand mixer, pour in the flour and add the yeast and water mixture. Start kneading.
Also add the salt and extra virgin olive oil; knead until the dough takes shape: it should be a compact and soft mass that does not stick to your hands or the bowl.
Cover the bowl with plastic wrap and let the dough rise for four hours, until it doubles in volume.
After the rising time, take the dough and divide it into three equal parts. Form small loaves and place them on a baking sheet lined with parchment paper and lightly greased. Alternatively, spread them in round pans to obtain round pizzas. Spread the pizzas with your hands and let them rise for another 3/4 hours, away from drafts, preferably in a turned-off oven.
Drizzle the pizzas with a little extra virgin olive oil and bake them in a preheated oven at 430°F for 15 minutes, or until your desired doneness.
Once the pizzas are out of the oven, top them with the drained tuna, some arugula, roasted cherry tomatoes, and some Parmesan shavings.
Serve the pizzas and enjoy your meal!
