The salad with grilled vegetables and chickpea hummus is a fresh and tasty vegetarian idea for a light and nutritious meal. I enriched this salad by adding fresh cherry tomatoes and roasted potatoes; you can customize the recipe by adding your favorite vegetables. I added grilled eggplants and zucchinis to the salad, seasoned with oil, salt, and oregano, and finally garnished the salad with chickpea hummus. Ingredients
- 7 oz cooked, boiled chickpeas
- Half clove garlic
- 0.7 oz tahini
- lemon juice
- to taste extra virgin olive oil
- to taste salt
- to taste water
- 1 head lettuce
- 7 oz zucchinis
- 5.3 oz eggplants
- 3.5 oz cherry tomatoes
- 3.5 oz potatoes
- to taste extra virgin olive oil
- 1 sprig dried oregano
- to taste salt

Steps
To make the salad with grilled vegetables and chickpea hummus, pour the chickpeas into the mixer bowl. Then add a drizzle of oil, tahini, and lemon juice.
Add salt and half a crushed garlic clove without its core. Blend until smooth. Add 2 tablespoons of water if needed to reach the desired consistency.
Wash and trim the zucchinis and eggplants, slice them lengthwise to a thickness of about half an inch. Heat the grill and cook them on both sides.
Peel the potatoes and cut them into cubes. Season with a drizzle of extra virgin olive oil and cook in an air fryer at 392°F for 20 minutes. Alternatively, cook them in a preheated oven at 392°F for about 30 minutes. Occasionally check the cooking and stir if necessary to ensure they cook evenly.
Place the grilled vegetables cut into pieces in a bowl. Add the diced cherry tomatoes and the potatoes. Season with oil, salt, and oregano. Mix with a spoon.
Take a serving plate, place the washed and dried lettuce at the bottom, then add the vegetables and finally garnish with hummus. Serve and enjoy!
