The savory waffles are the rustic version, ideal for savory brunches or appetizers, of the classic sweet waffles called waffles or goufre, famous for their honeycomb shape and usually topped with honey or fresh fruit.
Personally, I love them so much that I often prepare them for my family on weekends as real sandwiches, then filled with fresh and tasty ingredients.
As a waffle iron, I use this one to put directly on the stove, practical and fast and above all takes up very little space!

Ingredients
- 2 cups all-purpose flour
- 7/8 cup milk
- 2 eggs
- 2.5 tbsp extra virgin olive oil
- 2 tbsp Grana Padano DOP
- 2.5 tsp instant yeast for savory preparations

- 2 fiordilatte
- tomatoes
- cooked ham
- red onion
- iceberg lettuce
- 1 bunch basil
- salt
- pepper

Steps
Place the eggs with the milk and extra virgin olive oil in a bowl, season with a pinch of salt and beat with a hand whisk. Add the grated Grana Padano, the flour, and the instant yeast. Work with the whisk until you get a smooth batter without lumps.
Brush the waffle iron with a little extra virgin olive oil
Pour a scant ladleful of batter inside. Close the iron, put it on the stove, and cook for two minutes on each side over medium heat.
Continue this way until the ingredients are exhausted
Cut onion, tomatoes, and mozzarella into slices.
Place the tomatoes on the waffle, season with a pinch of salt, oil, and some basil leaves torn by hand
At this point, add the cooked ham
