The potato bruschetta is that tasty yet unusual idea to present the usual potato dish in a new and appetizing way.
To prepare the potato bruschetta you need just a few simple ingredients that we usually find in our kitchens!

Ingredients
- 2.2 lbs new potatoes
- 3 Tomatoes (Large and not too ripe)
- 7 oz pizza mozzarella
- 1 clove garlic
- 2 leaves basil
- oregano
- salt
- pepper
- extra virgin olive oil

Steps
cut the tomatoes into cubes
then chop the peeled garlic clove with the basil leaves
Gather the tomatoes in the bowl with the chopped garlic and basil. Season with salt, pepper, and a drizzle of oil. Mix and set aside
Wash the potatoes with the skin thoroughly. Boil them in plenty of salted water for about 20-25 minutes. Drain, pat with kitchen paper, and let them cool. Place the potatoes on the baking tray lined with parchment paper and smash each with a glass, just like I did here in the reel on my Instagram profile @isaporidicasa!
Season each potato with salt, oregano, and a drizzle of extra virgin olive oil.
Top the potatoes with the tomatoes and mozzarella cubes and put in the oven under the grill at 392°F until the cheese is completely melted. Remove, decorate the potato bruschetta with fresh basil, and serve immediately. Enjoy your meal!
