Coconut and hazelnut cream cookies are delightful lactose-free treats, cooked in an air fryer. If you don’t have an air fryer, you can bake the cookies in an oven; you’ll find the instructions in the procedure. Once cooked, the cookies are garnished with a spreadable hazelnut cream and a halved hazelnut. In just a few minutes, you’ll prepare delicious cookies!

Ingredients
- 3 tbsp all-purpose flour
- 1 1/4 cup shredded coconut
- 1 egg
- 1 1/2 tbsp sunflower oil
- 1/4 cup powdered sugar
- 1 tsp baking powder
- 1/4 cup coconut milk (or milk of choice)
- 1 tsp vanilla extract
- to taste lactose-free hazelnut spread
- 10 hazelnuts
- to taste shredded coconut

- Parchment paper
- Air fryer
Steps
To make the coconut and hazelnut cream cookies, pour the oil and egg into a bowl, whisk, and gradually add all other ingredients until you obtain a homogeneous mixture.
Cover with plastic wrap and place the bowl in the refrigerator, let rest for 10 minutes.
Line the bottom of the air fryer basket with parchment paper (preferably perforated parchment paper for air fryers).
Using two teaspoons, or a piping bag, scoop the dough and create balls or dollops, and place them inside the basket.
Cook the cookies in the air fryer at 356°F for 8-10 minutes, or until golden.
For those without an air fryer. Make the cookies and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 356°F for 10-15 minutes, until golden.
Once cooked, let them cool and bake the other cookies.
Garnish the cookies with a teaspoon of hazelnut spread and a halved hazelnut.
Serve them with a sprinkle of shredded coconut. Enjoy!
