Savory Pie with Colored Cauliflowers

The savory pie with colored cauliflowers is a rich and colorful idea to serve at the table as an appetizer or a single dish. To make this recipe, I used puff pastry filled with mozzarella and colored cauliflowers. I first blanched the latter, then gratinated them in a pan with breadcrumbs and grated pecorino. Once cooked in the oven, this savory pie will emit an irresistible aroma throughout the kitchen!

Savory Pie with Colorful Cauliflowers

Ingredients

  • 1 roll puff pastry (round)
  • 14 oz colored cauliflowers
  • 1 clove garlic
  • 1 sprig oregano
  • as needed extra virgin olive oil
  • 3 tbsps breadcrumbs
  • 2 tbsps grated pecorino
  • 7 oz mozzarella

Steps

  • To make the savory pie with colored cauliflowers, wash and clean the cauliflowers, then cook them for a few minutes in plenty of boiling water and once ready, drain them.

  • In a pan, lightly brown the garlic clove with a drizzle of extra virgin olive oil and oregano.

  • Then add the cauliflowers and sauté them in the pan. Finally, add the breadcrumbs and pecorino. Toast the breadcrumbs with the seasoning for a couple of minutes over high heat, being careful not to burn it.

  • Cut the mozzarella into cubes.

  • Take a round baking pan and place the puff pastry, leaving the provided parchment paper.

  • Pour the mozzarella and cauliflowers onto the base of the puff pastry. Fold the edges of the puff pastry inward.

  • Bake in a preheated oven at 400°F for 20 minutes, or until golden brown.

  • Serve the savory pie warm and enjoy your meal!
