The chicken satay with peanut sauce is a Thai recipe that involves making chicken skewers served with peanut sauce.

The secret ingredient of this recipe is Thai red curry paste, which is used as a flavor enhancer, and you can buy it online, at the supermarket, or in ethnic stores.
And for an exceptional result, I recommend using natural peanut butter without added sugars or oil, but regular peanut butter will work too. You can serve these skewers with jasmine rice (steamed) or with soft Asian coconut rice.

- 12.3 oz chicken chunks
- 3/4 cup coconut milk
- 1 tablespoon red curry paste
- 1 teaspoon sugar
- 1 teaspoon curry powder
- 1 teaspoon salt
- 2/3 cup coconut milk
- 3.2 oz water
- 2 tablespoons apple cider vinegar
- 1 tablespoon red curry paste
- 3.2 oz peanut butter
- 0.9 oz sugar
- 1 teaspoon soy sauce
- 1 teaspoon salt

Steps
To prepare the chicken satay with peanut sauce, in a bowl mix the chicken, coconut milk, red curry paste, curry powder, sugar, and salt.
Mix everything and let the chicken marinate for 20 minutes, or overnight.
Place the ingredients for the peanut sauce in a pot over medium-low heat. Stir occasionally, for 5 minutes. Adjust the consistency with water: it should be creamy and thick.
Once cooked, cover with a lid to keep the sauce warm while cooking the skewers.
Thread 4 or 5 chicken chunks onto each skewer. Heat 2 tablespoons of oil in a non-stick pan over medium-high heat. Cook the skewers for 3 minutes on each side until golden.
Alternatively, you can cook the skewers on the barbecue or charcoal.
Serve the skewers with peanut sauce. Enjoy!
