The puff pastry with ricotta and wild blackberries are delightful sweets ideal for serving at the end of a meal to your guests. I made puff pastries using a roll of puff pastry then, once baked in the oven, I garnished them with a ricotta cream, a blackberry coulis, and fresh blackberries. With just a few ingredients and in little time, you will create sweets that are beautiful to see but above all, irresistible in taste.

Ingredients
- 1 roll rectangular puff pastry
- 100 ml heavy cream
- 50 g ricotta
- as needed powdered sugar
- 100 g blackberries
- 20 g sugar

Steps
To make the puff pastry with ricotta and wild blackberries, first make the blackberry coulis.
Blend the blackberries (leaving some for decoration) and cook them with the sugar in a saucepan over low heat for five minutes. Then strain the coulis through a fine-mesh sieve to remove the seeds, collect the liquid mixture obtained in a bowl, and let it cool.
Roll out the puff pastry and cut into 12 squares. Overlap two squares, pressing them together lightly with your fingers. Then notch the sides of each pastry with a cutter, leaving half a centimeter from the edge.
Prick the center of each pastry and dust with powdered sugar.
Bake the pastries in a hot oven at 430°F for 15 minutes, or until golden.
In a bowl, pour the ricotta with powdered sugar, and using an electric mixer, cream the ricotta. Then incorporate the cream and beat with the beaters until you get a homogeneous cream.
Dust each pastry with powdered sugar, and garnish each with a spoonful of ricotta cream, a teaspoon of blackberry coulis, and two blackberries. Store in the fridge. Enjoy!
