Pasta with Roasted Bell Pepper and Feta Cream

The pasta with roasted bell pepper and feta cream is a vegetarian first course, with a delicate sauce that can also be enjoyed cold. To make this recipe, I first roasted the peppers, then blended them with oil, celery, and basil, obtaining a creamy sauce that blends well with the pasta. To make the pasta more flavorful, I added feta, and served it at the table!

Ingredients

  • 7 oz pasta
  • 2 red bell peppers
  • 2 oz feta
  • 1 stalk celery
  • to taste basil
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make the pasta with roasted bell pepper and feta, wash the peppers and place them on the already hot grill; you can use either an electric grill or cook them on charcoal. Turn them occasionally until the skin turns brown; the cooking time is 10-15 minutes. Put the cooked peppers in a plastic bag and let them cool.

  • Then take the peppers and remove all the skin, which will come off easily. With a knife, remove the stem and cut the peppers along one side to open them. Remove the white filaments and all the seeds inside the peppers, using your fingers, or you can quickly rinse the peppers under cold water to make this operation easier.

  • Cut the peppers into strips and put them in the mixer bowl. Add the garlic, chopped celery, and a few basil leaves.

  • Drizzle with extra virgin olive oil and blend until it becomes a creamy mixture. Adjust the salt and transfer the bell pepper cream to a pan.

  • Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente), drain it, pour it into the pan with the sauce, and let it blend for a few minutes.

  • Remove from heat and incorporate the feta cut into cubes. Serve and enjoy your meal!
