Ingredients for the preparation of the fig roll
- 1 shortcrust pastry
- 1.5 lbs figs
- 1 oz walnuts
- 10 amaretti
- as needed powdered sugar
- 2 tbsp rum
- 1/2 fig

Steps for preparing the fig roll
To prepare the delicious fig roll
Start by preparing the shortcrust pastry, find the recipe by clicking HERE
On a cutting board, cut the figs into small pieces with a knife and grind the amaretti and walnuts with a chopper
Roll out the shortcrust pastry on a sheet of parchment paper, on a pastry board to a thickness of about 1/8 inch, with a rolling pin and shape it into a rectangle,
Fill evenly, leaving the edges, and gently roll using the parchment paper
until you get a sausage shape. Bake in a static oven for 35-40 minutes until the pastry is well cooked inside or in an air fryer at 340°F for 22-24 minutes. Let it cool completely, dust with powdered sugar, and decorate with half a fig cut into a fan shape. The fig roll is ready to be enjoyed
Tips and Storage
Wait until it is completely cool before slicing it, so it doesn’t crumble.
Like many shortcrust desserts, it’s even better the next day as flavors meld.
The fig roll keeps for 2-3 days wrapped in plastic wrap or under a glass dome. It’s the best way to keep the pastry crumbly.
In the fridge: it keeps for up to 3-4 days, but the pastry becomes harder. Before serving, bring it to room temperature or warm it slightly in the oven.
In the freezer: you can freeze it whole or already sliced, wrapped in plastic and foil. It keeps for up to 2 months. To enjoy, just let it thaw at room temperature.
