The zucchini and chickpea fritters are tasty vegetarian bites, perfect to enjoy as a main course or as finger food for a home aperitif. Making these fritters is simple and quick, requiring few and simple ingredients: zucchini, chickpeas, flour, and, if desired, you can add spices for flavor. I cooked the fritters in a pan with oil and served them with yogurt sauce: finger-licking good!

Ingredients
- 7 oz zucchini
- 3.5 oz cooked, boiled chickpeas
- 0.5 cup flour (gluten-free for celiacs)
- to taste garlic powder
- 1 tsp chopped parsley
- to taste salt
- 1 tsp curry (optional)
- oil for cooking

Steps
To make the zucchini and chickpea fritters, grate the zucchini and place them in a bowl.
In the mixer bowl, add the chickpeas, some garlic powder (amount to taste), and parsley. Blend until the mixture becomes a mush.
Combine the chickpeas with the zucchini, add salt and the flour. Also add curry and mix until you get a homogeneous mixture.
With your hands, take the mixture and form balls by slightly flattening them.
In a pan, heat the oil, cook the fritters by turning them carefully until golden brown.
Serve the zucchini and chickpea fritters with yogurt sauce. Enjoy!
