Mini pancakes

The mini pancakes, also known as mini pancake cereal, are tasty treats made without eggs. I created the typical American pancakes in a mini version, their shape reminding of breakfast cereals. Easy to make, mini pancakes are perfect in milk at breakfast or to enjoy with yogurt and fresh fruit.

Mini pancakes
  • Difficulty: Easy

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup milk (also lactose-free)
  • 3 tbsp sugar
  • 2 tbsp butter (also lactose-free or 1 tbsp sunflower oil)
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Tools

  • Piping bag
  • Plastic bottles
  • Whisk
  • Crepe maker

Steps

  • To make the mini pancakes, first melt the butter in the microwave or in a bain-marie and let it cool.

  • In a bowl, pour the flour, add the baking powder and sugar. Mix the dry ingredients with a whisk.

  • Gradually add the milk while continuing to stir, then add the vanilla extract and melted butter; mix with the whisk until a smooth, lump-free mixture is obtained.

  • Transfer the mixture into a piping bag with a small nozzle, or alternatively into a squeeze plastic bottle with a nozzle.

  • Heat a crepe maker on low flame, then pour the batter forming small discs. When the mini pancakes start to bubble, use a spatula to flip them and let them cook on the other side.

  • Repeat the same operation until the batter is finished. Transfer the cooked pancakes to a small bowl.

  • Once all the mini pancakes are cooked, they will be ready to enjoy. Enjoy!

  • Note: to make the mini pancakes more delicious, you can fill them with hazelnut spread.
