Coconut Lady’s Kisses

The coconut lady’s kisses are crumbly and tasty coconut cookies, filled with hazelnut spread. To make these lady’s kisses I first made a dough with coconut flour; then, once baked in the oven and cooled, I filled them with hazelnut spread. Easy to make, these lady’s kisses are irresistible: you can’t stop at one!

Coconut Lady's Kisses
  • Difficulty: Easy

Ingredients

  • 1/3 cup coconut flour
  • 3/4 cup flour
  • 7 oz butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • as needed hazelnut spread

Steps

  • To make the coconut lady’s kisses, in a bowl combine the coconut flour with the brown sugar.

  • Add the softened butter and vanilla extract, start mixing with your hands (or with a mixer) and incorporate the flour.

  • Knead until you get a homogeneous dough; cover with cling film and let it rest in the refrigerator for an hour.

  • Once the dough has firmed up, divide it into many small portions of about 7 grams each; then take each portion with your hands and form into balls.

  • Place the balls on a baking sheet lined with parchment paper and bake in a preheated oven at 320°F for about 20 minutes, until golden.

  • Once cool, fill half of the hemispheres with hazelnut spread and join them with the other half. Enjoy!
