The broccoli croquettes are tasty vegetarian bites with a melty center and made without eggs. I made these croquettes with boiled broccoli, breadcrumbs, and pecorino cheese; inside, I put smoked provolone, and finally, I coated the croquettes with breadcrumbs mixed with pizza-flavored crackers. I baked them in the oven obtaining delicious croquettes that everyone will love, even those who don’t particularly like broccoli.

Ingredients
- 2 1/2 cups boiled broccoli
- 1/4 cup grated pecorino cheese
- 2 tbsp breadcrumbs
- 3 slices smoked provolone cheese
- to taste extra virgin olive oil
- to taste salt

- 1/3 cup pizza-flavored crackers
Steps
To make the broccoli croquettes, wash and clean the broccoli, then cook them in plenty of boiling water. Once done, drain them and let them cool.
Place the broccoli in a bowl and mash them with a fork. Then add the pecorino cheese, breadcrumbs, and a pinch of salt.
Mix with a fork until you obtain a soft mixture that can be shaped with your hands.
Cut the provolone into cubes. With your hands, take some of the mixture, flatten it, and place 2 cubes of cheese in the center. Then, again with your hands, form the croquettes into a round and flattened shape.
In a plate, mix the breadcrumbs with the crumbled pizza-flavored crackers.
Coat the croquettes in the breadcrumb mixture and place them on a baking sheet lined with parchment paper.
Drizzle the croquettes with a bit of extra virgin olive oil and bake them in a preheated oven at 392°F until golden, about 15/20 minutes.
