The turkey nuggets are crispy and delicious fried croquettes with an irresistible taste, easy and quick to make. I used turkey bites with a tasty breading: I coated the bites in flour, eggs, and cornmeal with the addition of pistachios. I discovered the cornmeal breading instead of breadcrumbs thanks to my brother; this way, you get light and crispy croquettes, also suitable for those following a gluten-free diet.

Ingredients
- 10.5 oz turkey bites
- 1 tsp paprika
- 1 tbsp grated pecorino cheese
- 1 tsp dried oregano
- to taste extra virgin olive oil
- to taste salt
- oil for frying
- 2 eggs
- to taste flour (rice flour for celiacs)
- 3.5 oz cornmeal
- 1 oz chopped pistachios
Steps
To prepare the turkey nuggets, place the turkey bites in a bowl, and season them with oil, paprika, oregano, and pecorino cheese. Salt and mix everything with a spoon.
In a bowl, beat the eggs with a pinch of salt. Pour the flour onto a plate. On another plate, combine cornmeal and chopped pistachios.
Coat each bite in flour, then in the beaten egg, and finally in the cornmeal with pistachios.
Fry the nuggets in hot oil until golden on both sides. Use a slotted spoon to transfer them onto a sheet of absorbent paper to remove excess oil.
Serve and enjoy!
