Potato Smiles with Mozzarella and Salami

The potato smiles with mozzarella and salami are delicious fried half-moons with a rich, gooey filling. I made the smiles with a mixture of potatoes, eggs, cheese, and flour; then I filled them with mozzarella and salami, breaded them, and finally fried them. With simple ingredients, you can make crispy and tasty potato smiles that will make everyone happy, both adults and children!

Potato Smiles

Ingredients

  • 1.43 lbs potatoes
  • 1 egg
  • 2 tbsps grated Parmesan cheese
  • 2/3 cup all-purpose flour
  • 2.82 oz Lorenzino salami (Salumi Lorenzi)
  • 2.82 oz mozzarella
  • to taste salt
  • as needed semolina for dusting
  • oil for frying
  • as needed flour
  • 2 eggs
  • as needed breadcrumbs

Steps

  • Peel the potatoes and boil them in a pot with plenty of salted water. Once cooked, place them in a bowl and mash them with a fork or potato masher.

  • Add the egg to the potatoes and start mixing, then add the grated Parmesan cheese and a pinch of salt.

  • Also add the flour and mix until you obtain a homogeneous mixture. If necessary, add more flour (its quantity may vary).

  • Cut the mozzarella and salami into cubes.

  • Dust the work surface with semolina and roll out the dough with a rolling pin.

  • Use a pastry cutter (10 centimeters in diameter) to cut discs from the dough. Place mozzarella and salami cubes in the center of each disc.

  • Fold each disc in half to form half-moons. Use your hands to seal the edges well.

  • Coat each potato smile first in flour, then in beaten eggs, and finally in breadcrumbs.

  • Fry the smiles in hot oil, browning them on both sides. Use a slotted spoon to transfer them to a paper towel to remove excess oil.
