Vegetables and Beans is a typical side dish from Abruzzo’s rural cuisine, a rich and nutritious vegetarian dish. This dish is one of my favorite side dishes that I have been eating since I was a child; my grandmother used to prepare it to accompany roast pork. Making vegetables and beans is very simple, for the preparation you need some mixed vegetables such as: chard, turnip greens, chicory, and all the field vegetables found in winter.

Ingredients
- 17.64 oz mixed vegetables
- 3.53 oz cannellini beans (or small white beans)
- 1 clove garlic
- 1 chili pepper
- to taste extra virgin olive oil
- to taste salt
Steps
To prepare vegetables and beans, soak the beans the night before, or for at least 6/8 hours. After the night, drain the legumes and rinse them under running water; then boil them in boiling water and once cooked, let them drain.
Wash and clean the vegetables, then cook them in plenty of salted boiling water. Once ready, let them drain.
In a pan, slightly brown the garlic with a drizzle of extra virgin olive oil and chopped chili pepper. Add the vegetables and sauté them in the pan for 5 minutes.
Then add the beans as well and cook in the pan for about 10 minutes.
Serve hot and enjoy your meal!
