Vegetables and Beans – Abruzzo Recipe

Vegetables and Beans is a typical side dish of Abruzzese peasant cuisine, a rich and nutritious vegetarian dish. This dish is one of my favorite side dishes that I have been eating since I was a child; my grandmother used to prepare it to accompany roast pork. Making vegetables and beans is very simple, for the preparation you need mixed greens such as chard, turnip tops, chicory, and all the field greens found in winter.

Vegetables and Beans
  • Difficulty: Easy

  • Preparation time: 10 Minutes
  • Cooking time: 1 Hour
  • Portions: 2 servings

Ingredients

  • 18 oz mixed greens
  • 3.5 oz cannellini beans (or navy beans)
  • 1 clove garlic
  • 1 chili pepper
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make vegetables and beans, soak the beans the night before, or at least for 6/8 hours. After the night, drain the legumes and rinse them under running water; then boil them in boiling water and once cooked, drain them.

  • Wash and clean the greens, then cook them in plenty of salted boiling water. Once ready, drain them.

  • In a pan, lightly brown the garlic with a drizzle of extra virgin olive oil and chopped chili pepper. Add the greens and sauté in the pan for 5 minutes.

  • Then add the beans and cook in the pan for about 10 minutes.

  • Serve hot and enjoy your meal!
