The broccoli stem chips are a tasty vegan and gluten-free option, perfect to enjoy as a side dish or for an aperitif with friends. This recipe is designed for those who, like me, have often thrown away the broccoli stem. I always try not to waste food and to use raw materials in all their parts. For this reason, I decided to use the broccoli stem to make easy and very tasty chips!

Ingredients
- 1 stem broccoli
- 1/4 cup rice flour
- 1 teaspoon dried oregano
- 1 teaspoon curry
- to taste extra virgin olive oil
Preparation
To make the broccoli stem chips, use a knife to cut the stem and clean it by removing the outer part.
Cut the stem into thin slices about 1-2 mm thick. Transfer the slices to a plate and drizzle with extra virgin olive oil.
In a plate, pour the flour and add the oregano and curry.
Coat the slices in the flour mixture and place them on a baking tray lined with parchment paper. Drizzle with a bit of extra virgin olive oil and cook.
They can be fried in hot oil. Alternatively, bake them in a preheated oven at 392°F for 15-20 minutes.
Or cook them in a hot air fryer at 356°F for 15 minutes, or until golden.
